2 slices white bread (or your preferred bread)
1 slice white American cheese (or cheese of choice)
1 slice yellow American cheese (or cheese of choice)
2 slices thinly sliced deli ham (or bacon/sausage)
1 large egg
1 tablespoon melted butter
Kosher salt and freshly ground black pepper, to taste

Prepare the sandwich layers: Place one slice of white American cheese on one slice of bread. Top with one slice of ham. On the opposite slice, place the yellow American cheese and remaining ham.

Cook the egg: Heat a small amount of butter or oil in a skillet over medium heat. Fry one egg per sandwich until cooked to your preference. Season with kosher salt and black pepper.

Assemble the sandwich: Carefully slide the fried egg onto one side of the sandwich. Bring both sides together gently, avoiding pressing down to preserve the yolk.

Grill the sandwich: Heat a skillet over medium-low heat. Brush the outside of the sandwich with melted butter. Place it butter-side down in the skillet. Brush the top with butter and cover loosely with foil. Grill until golden brown, then flip and cook until both sides are evenly browned and cheese is melted.
