Tropical Pineapple Mojitos (with Non-Alcoholic Option) 6

While classic mojitos will always have a place in our hearts, this Pineapple Mojito recipe adds a fun tropical twist that turns any occasion into a little getaway. The sweet tang of pineapple, combined with fresh mint and zesty lime, makes it taste like sunshine in a glass.

Why You’ll Love These Pineapple Mojitos

There’s just something magical about the combination of juicy pineapple, cool mint, and bright lime juice. These mojitos are refreshingly light, slightly sweet, and incredibly easy to make. Even if you’ve never been a mojito fan before, this fruity version might change your mind.

This drink also wins extra points for versatility — you can easily make a non-alcoholic version that’s just as delicious! Perfect for family gatherings or when you want a refreshing mocktail without the rum.

How to Make Pineapple Mojitos

At first glance, the steps might look a bit long, but once you start, you’ll realize how simple it is. The secret to this recipe’s amazing flavor lies in the Pineapple Mint Puree — a blend of fresh mint syrup and sweet pineapple that adds depth and tropical flair to each sip.

Here’s how it comes together:

  1. Make the Pineapple Mint Puree: Start with a simple syrup — sugar, water, and fresh mint. Once cooled, blend it with pineapple until silky smooth. You can keep it refrigerated for a few days, making it easy to whip up mojitos anytime.
  2. Muddle the Ingredients: In a shaker, lightly muddle lime wedges, pineapple chunks, and mint leaves. This releases the oils and juices, giving your drink a bold flavor.
  3. Shake and Serve: Add rum, ice, and the puree, then shake until frosty. Pour everything (no straining!) into your glass and top with sparkling club soda.

That’s it — a crisp, fruity cocktail that’s as beautiful as it is delicious.

A Non-Alcoholic Pineapple Mojito for Everyone

Not drinking? No problem! This mocktail version is just as vibrant and refreshing. Simply skip the rum and follow the same steps, adding a splash of pineapple juice for a hint of sweetness. Even kids will love sipping on these tropical delights!

My Kitchen Tips

For the best experience, use a muddler to gently crush the lime and mint — don’t overdo it or the mint can become bitter. I also recommend using a sturdy cocktail shaker (wrapping it in a dishtowel keeps your hands from freezing while shaking!). Serve in chilled glasses and top with a generous sprig of fresh mint for that signature mojito aroma.

Serving Suggestions

Pineapple Mojitos pair beautifully with grilled dishes, seafood, or summer appetizers. Think shrimp skewers, grilled chicken tacos, or a fresh mango salsa — the fruity notes complement them perfectly.

For a cozy night in, try the non-alcoholic version alongside spicy food or a tropical dessert like coconut pudding or pineapple cake.

Storage Tips

The Pineapple Mint Puree can be made ahead of time and stored in the fridge for up to 4 days. Just shake it before using. This makes it super convenient to prepare fresh mojitos anytime the craving hits!

Ice cubes

23 oz (60–90 ml) club soda

Mint sprigs and lime wedges, for garnish

For the Pineapple Mint Puree:

¾ cup (150 g) granulated sugar

1 cup (240 ml) water

1 cup fresh mint leaves, packed

1½ cups canned or fresh pineapple chunks (drained, reserve juice if canned)

2 pineapple chunks

2 lime wedges

2 mint leaves

3 oz (90 ml) Pineapple Mint Puree

4 oz (120 ml) club soda

Instructions

To Make the Pineapple Mint Purée

  1. In a small saucepan, combine sugar and water. Bring to a gentle boil over medium heat, stirring until the sugar dissolves completely (about 2 minutes).

  2. Remove from heat and add the mint leaves. Let steep while the syrup cools to room temperature.

  3. In a blender, add pineapple chunks and blend until smooth.

  4. Pour the cooled mint syrup into the blender and pulse a few times to combine.

  5. Transfer to a glass jar and refrigerate for up to 4 days.

  2. Lightly muddle to release the juices and oils.

  3. Fill the shaker with ice, add rum and pineapple mint purée.

  4. Shake vigorously for 30 seconds until frosty. (Tip: wrap the shaker with a towel to keep your hands warm.)

  5. Pour directly into a tall glass — no need to strain.

  6. Top with club soda, stir gently, and garnish with mint and lime.

To Make Non-Alcoholic Pineapple Mojitos (Mocktail)

  1. In a tall glass, muddle pineapple, lime, and mint.

  2. Add pineapple purée and club soda. Stir well.

  3. Taste and adjust sweetness with pineapple juice if needed.

  4. Garnish with fresh mint and lime.

Notes

  • For extra chill, freeze pineapple chunks ahead of time and use them instead of ice cubes.
  • You can double or triple the purée recipe and store it for later — perfect for parties!
  • Club soda can be replaced with sparkling water or even ginger ale for a twist.
  • Fresh mint is essential — don’t substitute with dried mint, as it changes the flavor.
