Ingredients

Ice, for shaker and glass

6 tablespoons (3 oz) pineapple juice

2 tablespoons (1 oz) sweet and sour mix

1 tablespoon (½ oz) simple syrup

1 tablespoon (½ oz) non-alcoholic blue curaçao syrup (like Torani Blue Curacao)

2 tablespoons (1 oz) chilled soda water (or more, to taste)

Pineapple wedge, for garnish

Cocktail umbrella, for garnish

Instructions

  1. Fill a cocktail shaker with ice.

  2. Add pineapple juice, sweet and sour mix, simple syrup, and blue curaçao syrup.

  3. Shake well until the mixture is chilled and combined.

  4. Add crushed ice to a hurricane glass.

  5. Strain the mocktail mixture into the glass.

  6. Top with chilled soda water, adjusting the amount for your preferred level of fizz.

  7. Stir gently to blend.

  8. Garnish with a pineapple wedge and a cocktail umbrella.

Notes

  • For extra froth, use a handheld frother or shake a bit longer.
  • Want it less sweet? Skip the simple syrup and add a splash more soda water.
  • To make a large batch, multiply the ingredients and mix in a pitcher, then pour over ice when serving.
