Ingredients

For the Seasoned Vinegar

4 tablespoons (60 ml) unseasoned rice vinegar

1 1/2 tablespoons (18 g) granulated sugar

1 1/2 teaspoons kosher salt (reduce by 1/4 teaspoon if using table salt)

For the Sushi Rice

2 cups (360 g) short-grain sushi rice

2 1/2 cups (20 oz) cool water, plus extra for rinsing


Instructions

  1. Make the Seasoned Vinegar:
    Combine the rice vinegar, sugar, and salt in a small heatproof bowl. Microwave for about 40–45 seconds, then stir until completely dissolved. You may also warm the mixture on the stovetop just until steaming.

  2. Rinse the Rice:
    Add the uncooked rice to a medium saucepan and cover with cool water. Swirl gently with your hand and drain. Repeat this process 2–3 times until the water runs mostly clear. Drain thoroughly through a fine mesh strainer.

  3. Cook the Rice:
    Return the rinsed rice to the pot and add 2 1/2 cups water. Bring to a gentle simmer uncovered. When small bubbles appear across the surface, stir once, cover, reduce heat to low, and cook for 14–15 minutes. Remove from heat and let rest, covered, for 10 minutes.

  4. Season the Rice:
    Uncover and drizzle the warm seasoned vinegar over the rice. Use a wide spatula to fold the vinegar into the grains, taking care not to mash them. Allow the rice to cool to room temperature. Keep a damp towel directly over the rice to prevent drying.

  5. Use or Store:
    Use immediately for sushi rolls, bowls, or stacks. Refrigerate leftovers in an airtight container for up to 3 days.

Notes

  • Rice Cooker Method: Combine rinsed rice with 2 cups of water in the rice cooker, stir once, and cook according to the device instructions. Stir in the seasoned vinegar after cooking.
  • For Non-Sushi Dishes: You may omit the seasoned vinegar. Add a little salt to the cooking water if you want more flavor.
  • Reheating Tip: Sprinkle with water and cover with a damp paper towel before microwaving.
  • Add Nori for Flavor: Lightly toasted nori can be crumbled into the warm rice for a briny, savory touch.
  • Measuring Accuracy: Slightly overfilled cups of rice can throw off the water ratio. Level your measuring cups or weigh the rice for best results.
