Ingredients

4 cups cooked, chopped chicken

2 celery ribs, finely diced (about 1/2 cup)

1/4 medium sweet onion, finely diced (about 1/3 cup)

1 cup diced dill pickles

1 tablespoon fresh dill, chopped (or 1 teaspoon dried, optional)

3/4 cup mayonnaise

2 tablespoons dill pickle juice

Salt, to taste

Pepper, to taste


Instructions

  1. In a large bowl, combine chicken, celery, onion, and dill. Set aside.
  2. In a small bowl, whisk together mayonnaise and dill pickle juice.
  3. Pour dressing over chicken mixture and toss until well coated.
  4. Season with salt and pepper to taste.
  5. Add pickles just before serving to maintain crunch. Serve on bread, crackers, or lettuce wraps.

Notes

  • To meal prep, store pickles and fresh dill separately and mix in before serving.
  • Adjust the amount of pickle juice depending on your preferred tanginess.
  • For a lighter version, try using plain Greek yogurt instead of mayonnaise.
