Ingredients
4 cups cooked, chopped chicken
2 celery ribs, finely diced (about 1/2 cup)
1/4 medium sweet onion, finely diced (about 1/3 cup)
1 cup diced dill pickles
1 tablespoon fresh dill, chopped (or 1 teaspoon dried, optional)
3/4 cup mayonnaise
2 tablespoons dill pickle juice
Salt, to taste
Pepper, to taste
Instructions
- In a large bowl, combine chicken, celery, onion, and dill. Set aside.
- In a small bowl, whisk together mayonnaise and dill pickle juice.
- Pour dressing over chicken mixture and toss until well coated.
- Season with salt and pepper to taste.
- Add pickles just before serving to maintain crunch. Serve on bread, crackers, or lettuce wraps.

- To meal prep, store pickles and fresh dill separately and mix in before serving.
- Adjust the amount of pickle juice depending on your preferred tanginess.
- For a lighter version, try using plain Greek yogurt instead of mayonnaise.
