Ingredients
4 large eggs
Kosher salt and pepper, to taste
4 teaspoons olive oil, divided
4 slices bread of choice
1/2 Hass avocado, thinly sliced
4 slices cheddar cheese
1 medium tomato, thinly sliced
2 tablespoons mayonnaise

Beat the eggs: In a medium bowl, whisk together eggs with a pinch of salt and pepper until smooth.

Scramble the eggs: Heat 2 tsp olive oil in a non-stick skillet over medium-low heat. Add eggs and cook slowly, stirring gently, until soft and fluffy. Remove from heat.

Assemble the sandwiches: Lay out 4 slices of bread. On 2 slices, layer avocado, 1 slice of cheese, half the scrambled eggs, a second slice of cheese, tomato slices, and top with the remaining bread. Repeat for the second sandwich.

Toast the sandwiches: Spread mayonnaise on the outside of each sandwich. Heat a heavy-bottom skillet over medium-low heat and toast sandwiches until golden brown and crispy, with melted cheese inside. Slice in half and serve immediately.
