Ingredients

6 slices bread (brown, white, potato, or multigrain)

2 tablespoons unsalted butter, softened

3 large eggs

2 teaspoons Dijon mustard

2 teaspoons Worcestershire sauce

78 ounces sharp or aged cheddar cheese, shredded

½ teaspoon freshly cracked black pepper

1 tablespoon fresh chives, finely chopped


Instructions

  1. Preheat the oven to 425°F (220°C). Line a large baking sheet if desired.

  2. Arrange the bread slices on the baking sheet. Lightly butter one side of each slice, then turn them over so the buttered side is facing down.

  3. In a medium bowl, whisk together the eggs, mustard, and Worcestershire sauce until well combined.

  4. Stir in the shredded cheese and black pepper until evenly mixed.

  5. Spoon the cheese mixture evenly over each slice of bread and spread gently into an even layer.

  6. Bake for 8–12 minutes, until the bread edges are golden and the cheese topping is puffed and just set in the center.

  7. Remove from the oven, sprinkle with fresh chives, and serve immediately.

Notes

  • If aged cheddar is unavailable, use extra-sharp cheddar or another strongly flavored cheese that melts well.
  • For added variety, cooked bacon or ham can be placed on the bread before adding the cheese mixture.
  • These toasties are best eaten fresh and do not store or reheat well.
