Ingredients

8 ounces lion’s mane mushrooms, thickly sliced

2 tablespoons ghee or butter

2 tablespoons tamari or coconut aminos

1 teaspoon minced garlic

Pinch of coarse sea salt

Fresh parsley, chopped, for garnish

Instructions

  1. Heat ghee or butter in a skillet over medium-high heat.
  2. Add the sliced mushrooms and cook without stirring for several minutes until the bottom side is golden brown.
  3. Flip the mushrooms and cook the other side until evenly browned.
  4. Add tamari and garlic, tossing to coat the mushrooms evenly. Cook for 30–60 seconds until the liquid is absorbed.
  5. Sprinkle with coarse salt and garnish with parsley. Serve immediately.

Notes

  • For extra depth of flavor, consider adding a splash of white wine or a sprinkle of smoked paprika during the sauté.
  • Lion’s mane mushrooms absorb flavors well, so don’t hesitate to experiment with herbs and sauces.
  • Avoid overcrowding the pan to ensure proper caramelization. Cook in batches if needed.
