Description

A visually stunning Galaxy Piña Colada mocktail bursting with tropical pineapple and coconut flavors, finished with a magical blue swirl and edible glitter. Perfect for parties and special occasions.


Ingredients

2 cups frozen pineapple chunks (about 10 ounces)

4 ounces coconut cream (well-stirred)

1 ounce fresh lime juice (from about 1 medium lime)

1/4 teaspoon vanilla extract

2 ounces simple syrup

1 cup ice cubes

2 ounces non-alcoholic blue curaçao syrup

1/4 teaspoon edible glitter (food-safe)

Garnish options: pineapple wedges, maraschino cherries, colorful straws


Instructions

  1. Place 2 cups frozen pineapple chunks, 4 ounces coconut cream, 1 ounce lime juice, 1/4 teaspoon vanilla extract, 2 ounces simple syrup, and 1 cup ice in a blender.
  2. Blend on high speed until smooth and creamy, about 30-45 seconds. The mixture should be thick but pourable.
  3. Chill two hurricane glasses or tall glasses in the freezer for a few minutes.
  4. Pour the blended mixture into the chilled glasses, filling about three-quarters full.
  5. Slowly pour 1 ounce of blue curaçao syrup down the inside of each glass, allowing it to sink naturally. For best results, pour it over the back of a spoon to control the flow.
  6. Using a long spoon or straw, gently swirl the mixture to create your galaxy effect. Don’t overmix – you want distinct blue swirls.
  7. Sprinkle each drink with a pinch of edible glitter.
  8. Garnish with a pineapple wedge and/or maraschino cherry on the rim of the glass.
  9. Serve immediately with a colorful straw.

Notes

  • To make simple syrup: Combine equal parts granulated sugar and water in a small saucepan. Heat over medium heat, stirring until sugar dissolves completely. Cool before using. Keeps refrigerated for up to 2 weeks
  • For the brightest blue color: Pour the blue curaçao syrup last and swirl minimally to maintain distinct color separation.
  • Storage tip: This drink is best enjoyed immediately after preparation, as the galaxy effect will gradually fade as the ingredients settle.
