Ingredients
1 pound lean ground beef
1 cup diced red onion
3 cloves garlic, minced
1/2 cup ketchup
1/4 cup stone-ground mustard
3 1/2 tablespoons dill relish
1 (15-ounce) can petite diced tomatoes, undrained
8 ounces cream cheese, cut into cubes
8 ounces shredded sharp cheddar cheese
8 ounces shredded Colby Jack cheese, divided
8–10 slices bacon, cooked until crispy and chopped
Instructions
- In a large skillet over medium heat, cook the ground beef with the diced onion and garlic until the beef is fully browned and the onion is soft. Drain excess grease if needed.
- Stir in the ketchup, mustard, and relish. Cook for one additional minute to blend the flavors.
- Transfer the beef mixture to the slow cooker.
- Add the diced tomatoes, cream cheese, all of the cheddar cheese, half of the Colby Jack cheese, and the chopped bacon.
- Stir well, cover, and cook on low heat for 2–3 hours, stirring every 20–30 minutes until the dip is fully melted and smooth.
- Sprinkle the remaining Colby Jack cheese over the top, cover again, and allow it to melt for about 10–15 minutes.
- Set the slow cooker to warm and serve immediately.
Notes
- Serve with tortilla chips, potato chips, pretzels, or toasted bread slices.
- Fresh vegetables like celery or carrots are a great lighter dipping option.
- For added heat, mix in chopped jalapeños or a splash of hot sauce.
- Ground turkey can be used instead of beef for a lighter variation.
- To bake instead of using a slow cooker, spread the mixture into a greased baking dish and bake at 350°F (175°C) until hot and bubbly, then add remaining cheese and bake briefly until melted.
