1 large egg
¾ oz (about 20 g) feta cheese, crumbled
1 small tortilla or slice of toasted bread
¼ ripe avocado
Dried oregano, to taste
Red pepper flakes, to taste (optional)
Olive oil spray or a small amount of olive oil
Fresh lemon juice
Optional garnishes: pickled onions, chili oil, fresh herbs
Instructions
- 1 large egg
- ¾ oz (about 20 g) feta cheese, crumbled

Notes
- Heat a small non-stick frying pan over medium heat and lightly grease with olive oil.
- Crumble the feta cheese into the pan, forming a loose circle slightly larger than the egg.
- Let the feta cook for 1–2 minutes until it begins to melt and turn golden underneath.
- Gently crack the egg into the center of the melted feta.
- Season with dried oregano and red pepper flakes.
- Cook until the egg whites are set and the yolk reaches your desired doneness. Cover briefly with a lid if needed.
- Warm the tortilla or toast the bread. Mash the avocado on top and finish with a squeeze of lemon juice.
- Carefully remove the egg with a spatula and place it on the prepared base.
- Garnish as desired and serve immediately.
