Ingredients
For the Roasted Garlic:
1 whole head of garlic
1 tablespoon extra-virgin olive oil
For the Whipped Feta Mixture:
¾ to 1 cup plain Greek yogurt (2% or whole milk works best)
4 ounces feta cheese, crumbled
1 tablespoon olive oil
1 tablespoon fresh lemon juice
Salt and freshly ground black pepper, to taste
For Garnish:
A drizzle of olive oil
1–2 tablespoons chopped fresh herbs (parsley, chives, or dill)
A pinch of red pepper flakes (optional)
Instructions

Roast the Garlic

Preheat your oven to 400°F (200°C).

Slice about ¼ inch off the top of the garlic head to expose the cloves.

Place the bulb on a small piece of foil, drizzle with olive oil, and wrap it loosely.

Roast for 40–45 minutes, or until the cloves are soft, golden, and fragrant.

Let it cool slightly, then squeeze the roasted cloves out of their skins.

Make the Whipped Feta Dip

Add the roasted garlic cloves to a food processor or high-powered blender.

Add the Greek yogurt, feta cheese, olive oil, and lemon juice.

Blend for 1–2 minutes, pausing to scrape down the sides, until smooth and creamy.

Season with salt and pepper, then blend once more to combine.

Serve and Garnish

Spoon the dip into a serving bowl.

Drizzle with olive oil, sprinkle with herbs and red pepper flakes, and serve.
