1.3 lbs (600g) chicken breasts, cut into 1.5-inch cubes

810 wooden skewers

1 large red bell pepper, cut into chunks

1 large yellow bell pepper, cut into chunks

1 medium red onion, cut into quarters

1 cup cherry tomatoes (optional)

For the Mediterranean Marinade:

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

2 garlic cloves, minced

1 teaspoon sweet paprika

1 teaspoon dried oregano

1 teaspoon honey

3/4 teaspoon kosher salt

1/2 teaspoon black pepper


Instructions

  1. Soak: Place wooden skewers in water for at least 30 minutes while you prepare the other ingredients.
  2. Marinade Magic: In a large mixing bowl, whisk together olive oil, lemon juice, minced garlic, paprika, oregano, honey, salt, and pepper until well combined.
  3. Marinate: Add cubed chicken to the marinade and toss until every piece is well coated. Cover and refrigerate for at least 1 hour, or overnight for maximum flavor.
  4. Assemble: Thread marinated chicken alternately with bell pepper chunks, red onion pieces, and cherry tomatoes onto soaked skewers, creating colorful patterns.
