Ingredients

For the Cookies

2 3/4 cups (330 g) all-purpose flour

1/2 cup (50 g) unsweetened cocoa powder

1 teaspoon ground cinnamon

1/4 teaspoon ground cayenne pepper (optional for less heat)

1 1/2 teaspoons cream of tartar

1 teaspoon baking soda

1/2 teaspoon baking powder

1/2 teaspoon salt

1 cup (240 g) unsalted butter, softened

1 cup (200 g) granulated sugar

1/2 cup (90 g) packed light or dark brown sugar

2 large eggs

1 teaspoon vanilla extract

For the Spiced Sugar Coating

1/4 cup (50 g) granulated sugar

1 tablespoon ground cinnamon

1 teaspoon freshly ground cardamom


Instructions

  1. Preheat the Oven
    Preheat your oven to 350°F (180°C). Line one or two baking sheets with parchment paper and set aside.

  2. Mix the Dry Ingredients
    In a large bowl, whisk together the flour, cocoa powder, cinnamon, cayenne, cream of tartar, baking soda, baking powder, and salt. Set aside.
